uses
Balasmic Vinegar of Modena is a speciality obtained from the musts of
Trebbiano and Lambrusco grapes from the Modena region.The Ortalli brand differs
from its competitors in that it uses exclusively cooked must. The unfermented
juice is placed in wooden barrels together with wine vinegar and left to mellow.
It has an acidity of 6%.
The resulting rich, brown color and sweet and sour
flavor makes a most versatile food product. Some common uses include:

Sprinkling it on salads, fish, stew and pastas.
• Using it to dress salad,
along with olive oil.
• Substituting it for red wine when preparing meat
sauces
• Sprinkling it on strawberries.
